Ingredients:
4 stalks celery, shredded
1 yellow onion, finely chopped
1 garlic clove, chopped
1 carrot, grated
1 Vegetable Stock Cube
2 Fresh tomatoes
1 pkt (400 g) crushed tomatoes
500 ml of water
2 tsp oil salt and pepper
Chopped parsley and celery leaves.
Directions
1 Saute onion, garlic celery, and carrot in the oil in a saucepan over low heat. Add Fresh tomatoes and 100 ml of the water and let it boil on low heat for about 5 minutes.
2. Stir in the tomatoes, the rest of the water and the stock cube. let the soup cook for about 10 minutes more. Stir in the meantime or from time to time
3. Season with salt and pepper and sprinkle with parsley and celery leaves.
