Ingredients
3 egg yolks
2-4 tablespoons of squeezed lemon
1/2 teaspoon French mustard
350/450 ml cooking oil
Salt, pepper
Directions
1. Beat the egg yolks for a few minutes so that they thicken and become slightly sticky. Add lemon juice, salt, pepper and mustard. Beat for a minute.
2. Add the oil drop by drop while whisking. When you have whisked in 1/2 100 ml of oil, the mayonnaise starts to thicken. Whisk in the rest of the oil a tablespoon at a time.
